CLASSIC BEETROOT, BORO
In our beetroot we seek searing colour and gently sweet flavour. Thinly slice and drizzle with one-part honey, two-parts rapeseed oil to serve as carpaccio. Available from September through January.
STRIPED BEETROOT, GUARDSMARK
A perennial favourite with chef’s kitchens, they come with a sweeter, crisper flavour than classic red beetroot. Their candy cane colours suit them perfectly to plating. Available from September through January.
FINE GREEN BEANS, BOSTON, LOMAMI AND VOLTA
We want to see green beans with crunch, snap and strong flavour in the pod. Serve hot, topped with lemon, butter, and olive oil. Layer in black olives, sesame seeds, quartered soft-boiled eggs for a perfect spring lunch. Available November through May.
SPRING ONION, HARDY WHITE
Spring onion’s small tender stems can transform a dish. We prefer ours to be fat and tightly packed. Flash fry and serve as a stand-alone with romesco, or softly sweat with peas, as a base for a spring frittata. Available from November through May.
TOMATO, DE MILPA
Our tomato is in fact a tomatillo, the name given for tomatoes in the leaf. With flavour and bite somewhere between a tomato and a plum, these playful characters are great for adding flavour and visual interest to a plate. Available from January through December.
